Broccoli & Cheese Quinoa Casserole

Ingredients
1.5 C Organic Quinoa3 C Chicken/Vegetable Broth2 Eggs1 C Skim Milk1.5 C Frozen Broccoli2 Garlic Cloves. minced1.5 C Shredded Cheddar Cheese1/4 C Shedded Parmesan1/4 C Panko Bread CrumbsSalt & Pepper to Taste
Directions
1. Preheat oven to 350 Degrees Farenheit

2. Boil broth. Add Quinoa, cover, and reduce heat to low. Simmer for 15-20 minutes or until all liquid is absorbed. Once all liquid is absorbed, remove from heat, but leave covered until ready to use.

3. Saute minced garlic. Add frozen broccoli and about 1/4 cup of water. Cover and steam.

4. In a food processor, coursely chop broccoli and garlic.

5. Whisk eggs and milk. Fold in quinoa, broccoli and garlic, desired salt & pepper, and most of the cheese.

6. Lighly spray 9x13 pan with cooking spray. Transfer mixture to 9/x13 pan. Top with remaining cheese and panko bread crumbs.

7. Bake for 30-35 minutes until bread crumbs are browned.
