Lima Beans

Ingredients
1 lb Lima Beans6 c Water1 Onion (large)6 Garlic Cloves8 oz Conecuh Smoked Sausage8 oz. Pickeled Pork2 tbsp Black Pepper2 Chicken Bouillon Cubes3 tbsp flour3 tbsp oil4 cups rice(cooked)
Directions
Soak lima beans overnight.
Return beans to pot.
Add 6 cups water.
Turn heat on high.
Peel and dice garlic and onion then add to pot with beans.
Add in chicken bouillion cubes.
Cut Sausage in 1/2 inch pieces and add to pot along with pickeled pork.

Cook on high heat at a rolling boil for 45 minutes.
Lower to medium heat for 25 minutes.

Towards the end of that 25 minutes, combine oil and flour in a seperat pan and make a roux.
*Cook both ingredients on medium heat constantly stirring until it turns from white to a light brown/caramel color.

Once roux reaches caramel color, add directly to the pot of beans.
Stir to incorporate into beans. (this will thicken the beans along with providing extra flavor)
Add Black Pepper.

Serve over rice.
