ginger carrot lentil soup

Ingredients
1 tsp butter 1.5 tsp oil1 med onion dicedpeel from 1 orange( plus 2 tbsp juice)1 tbs minced ginger root1 cup dry red lentils5 cups carrots diced900 ml(4 cups) chicken broth1/4 cup white wine1/2 tsp salt, 1/4 tsp pepper, pinch of nutmeg and cloves1 can low fat evapourated milk
Directions
saute onions 5 min til golden add orange peel, ginger, carrots lentil and seasonings saute 1 min add broth and wine. Bring to boil and cook until carrots and lentils done. 15 minutes in pressure cooker about 30 minutes on stove top depending on type of lentils used . using blender or food processer process til smooth in batches if necessary.Blend in evapourated milk. adjust seasonings
