kumara and corn soup

2 tsp peanut oil1 massive kumara1 big onion2 cloves of garlicthumb gingerone dried chillimustard seeds3 fat pinches of cuminchicken stockcannelini beans x 1 cancreamed corn x 1 can1 x expired soup mix (this doesnt have to be expired by the way)
cut up onion and sweet potato
saute onion in heavy bottom soup pot for 10 mins or until soft, at some point in the process add garlic and ginger and then spices (use whatever your feeling) add 2 cups of stock, and kumara, and then enough water to just cover the kumara. cover. Simmer until kumara is soft. At some point add the soup mix.
when kumara is cooked through, mash it up a bit (depending how chuncky you want it), then add corn and beans and cook a further 5 minutes or so, add boiling water to bring to your desired consistency.
Serving Size: makes about 5 x 2 cup serves
