Pork Tenderloin Roast

Ingredients
1 lb Pork Tenderloin2 Lg Sweet Potaoes1 Med Onion2 Tbsp Brown Sugar1 C apple Juice
Directions
Cut the Tenderloin into medallions about 1" thick.

Peel and dice the Sweet Potato and Onion

Put the Tenderlion Medallions into a roasting pan and cover with potatoes and onions

Pour over apple juice and then sprinkle brown sugar over the top

Cover and slow roast 2-3 hours at 275.
