Ingredients
Cooking spray1 small onion, chopped4 cups cauliflower, chopped3 cups carrots, chopped1 tsp Garam Masala1.5 tsp curry powder.5 tsp cinnamon1 tsp salt1 Tbsp vegetable base/bouillon5 cups water
Directions
Spray Dutch oven or other large pot with cooking spray and cook onions until translucent, approx 5 minutes. Dissolve vegetable base in 1 cup hot water. Add cauliflower, carrots, spices, vegetable base and water to pot and mix thoroughly. Bring to a boil, reduce heat, cover and simmer approximately 20 minutes or until vegetables are fork-tender. Allow to cool and use hand-blender to puree into yummy soup.

    I didn't have masala, so I didn't add it. I also don't like curry. But tasted delicious and added a little almond breeze to make it more creamy. thanks!
