Baked Pasta with Chicken

1 lb chicken breast (cut into 1 inch pieces)12 oz uncooked pasta28 oz crushed tomatoes3 tsp olive oil3 cloves garlic, minced10 oz frozen spinach, thawed2 tsp oregano2 tbsp basil1 tbsp italian seasoningssalt and fresh pepper to taste6 oz goat cheese1/4 cup grated Parmesan cheese2 cups (8 oz) shredded part skim mozzarella
Preheat oven to 375°. Oil a 9x13-inch baking pan with oil spray.
In a large pot of salted water, cook pasta according to instructions until al dente. Drain and return to pot.
Meanwhile, in a medium saucepan, add olive oil and sauté garlic and chicken (you do not need to cook the chicken all the way through). Add chopped spinach, and tomatoes. Season with basil, oregano, italian seasonings, salt and pepper.
Add sauce to the pasta. Add Parmesan cheese, goat cheese, and half of the mozzarella. Mix well then transfer to the baking pan. Top with the remaining mozzarella.
Bake for 30 minutes, or until mozzarella is melted and the edges are lightly browned. Let it cool 5 minutes, then cut it into 8 equal portions.
