Cauliflower Soup (south beach style)

Ingredients
Cauliflower, raw, 1 head, large (6-7" dia)*sweet yellow onion, raw (1 medium onion), 1 serving Olive Oil, 1 tbsp Pacific Natural Foods Organic Low Sodium Chicken Broth, 1 cup, 4 serving Nutmeg, ground, 2 tspGarlic, 3 cloves
Directions
Saute Onion, garlic in Olive Oil for 5 min. Throw in chopped cauliflower & stems, cover & cook 5 min longer. Add broth and simmer for 15 minutes. Blend soup then serve with shredded cheese or dollup of cream cheese.
