Black bean and quinoa tacos

3/4 Cup dry quinoa2 cups black beans, soaked and prepared1 tsp ground cumin1/8 tsp cayenne pepperSalt and pepper to taste1 half of a zucchini, diced1 tomato, diced1 onion3 cloves of garlic2 tsp olive oilAvocadosWhole wheat tortillas
Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes. Stir diced zucchini and tomatoes into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans. Use 1/4 an avocado and 1/8 cup shredded cabbage per taco. (Tortillas were NOT included in total. I use Mama Lupe's low carb tortillas for 60 calories per tortilla)
