Tomato and Green Pepper Tofu Scramble

- 2 tablespoons olive oil- 1 yellow onion, diced- 1 green bell pepper, cored and sliced into bite-size pieces- 2 garlic cloves, minced- 1 block fi rm tofu, cut into 1-inch cubes- 1 cup tomato juice or sauce- 1 tomato, seeded and diced- 1 teaspoon garlic powderDaniel Fast Recipes 111- 1 teaspoon onion powder- ½ teaspoon liquid smoke- 1 tablespoon soy sauce- ½ teaspoon turmeric- ¼ teaspoon ground cumin- Salt and pepper to taste
1. Heat olive oil in a large skillet over medium heat; sauté onion, bell pepper,
and garlic for 3 minutes or until onion is soft.
2. Add the tofu and the tomato juice. Simmer until the peppers are cooked.
3. Stir in tomato, garlic powder, onion powder, liquid smoke, soy sauce,
turmeric, and cumin; cook until all ingredients are well heated; add more oil
if necessary.
4. Adjust seasoning with salt and pepper. Serve hot along with side of fresh
fruit or wrap in chapati and garnish with salsa for a breakfast burrito.
