Omelet Muffins

Ingredients
12 large eggs1/4 cup skim milk1/4 tsp. black pepper1 cup shredded cheddar cheese3 slices Canadian bacon, diced1 cup fresh spinach, chopped
Directions
1. Preheat oven to 375 degrees.

2. Line muffin tin with paper liners, then spray liners with nonstick spray.

3. In a bowl, whisk together eggs, milk, and pepper.

4. Layer bacon, spinach, and cheese in each muffin cup. Each cup should be about 2/3 full.

5. Pour egg mixture into muffin cups, filling each to 3/4 full.

6. Stir slightly with a fork.

7. Bake at 375 degrees for 20 minutes, or until eggs have set.

8. Refrigerate for up to a week.
