Swedish Pancakes

Ingredients
1 cup King Arthur glutenfree multipurpose four 1/2 tsp xanthum gum1/2 tsp salt6 large eggs 1/1/4 cup milk2 tbs melted smart balance
Directions
Using an 8 inch frying pan. Heat until hot and then spray pan with pam or butter ( need to add those calories in if you do). Pour 1/3 cup of batter in to the pan and turn quickly so that it evenly coats the bottom of the pan and forms a flat think crepe like pancake. When it has dried about 1-2 minutes flip over to brown the other side (about 15 seconds on the back side). I cook these on power 8 on my stove. We serve them one a time hot for breakfast and if you wish to roll them us with fruit or other fillings they are a really great treat.
