Sweet Potato Pancakes

1 1/2 cups all-purpose flour3 1/2 teaspoons baking powder1 teaspoon salt1/2 teaspoon ground nutmeg1 1/4 cups mashed cooked sweet potatoes1/3 cup liquid egg whites1 1/2 cups almond milk1/4 cup butter, melted*gluten free option-substitute brown rice flour or potato four *More whole grains-substitute 3/4 cup flour with whole grain flour
Cook 1 1/4 cups of sweet potatoes soft enough to mash. Easiest method is steam 2 large pierced sweet potatoes in microwave, and remove skin with cooled. While potatoes are cooking, sift dry ingredients into a large mixing bowl. Combine remaining wet ingredients into a separate medium bowl. Add wet ingredients into large bowl of dry and whisk together until moistened. Drop by tablespoons or 1/4 cup onto a greased skillet or non stick griddle on about 350 degrees. When bubbles form on top, flip and lightly brown on both sides.
