Spinach and Fennel Salad

Ingredients
1 Tbsp EVOO2 Tbs red wine vinegar1/2 tsp Dijon mustard1/2 tsp minced garlic1/2 tsp ground black pepper1/2 c red onion, thinly sliced 6 c baby spinach1 fennel bulb, thinly sliced (about 1.5 c sliced) 4 strips center-cut bacon, cooked crisped & finely diced
Directions
In a small bowl, whisk together oil, vinegar, mustard, garlic and pepper. Add onions and marinate for 10 minutes. In a large bowl, combine spinach and fennel. Pour dressing and onions over spinach and toss to combine. Top with bacon bits.

Serving Size: Makes 4, 2-cup servings.
