The best italian fried eggplant

Ingredients
Canola oil for deep frying 1 - 3 cups1 whole eggplant peeledparmesan bread dip and seasoning4 section italian seasoningparmesan cheese1 cup panko italian bread crumbs1/2 cup floursalt to taste1 egg + water
Directions
Slice up the peeled eggplant to resemble pickle spears or chunky fries. Dip in egg, then coat in mixture of: panko, flour, 1/4 cup parm, seasonings. Place in oil and fry until crispy. Remove to draining plate, sprinkle with parmesan bread dip and seasoning, and a dash of parmesan and salt. OMG delicious!

Serving Size: Feeds 10 as a party appetizer at a few pieces each, depending how small you make the spears.
