*Arrowhead Mills Organic Quinoa, 1 cup(remove)Mangos, 1 cup, sliced(remove)Onions, raw, .25 cup, chopped(remove)Cilantro, raw, 16 tbsp(remove)Jalapeno Peppers, .50 pepper(remove)Beans, black, 2.5 cup(remove)Yellow Sweet Corn, Frozen, 1 cup kernels(remove)*Peppers, sweet, red, fresh, 1 small(remove)*Lemon Juice, .18 cup(remove)Olive Oil, 1.5 tbsp(remove)*Ground cumin, .5 tsp(remove)Chili powder, .50 tsp(remove)Garlic, 2 tsp(remove)
rinse quinoa and place in sauce pan with 2 cups water bring to a boil reduce heat cover and cook 15 minutes.
finely dice, onion, red pepper, jalapeno, cilantro, and garlic set aside
dice up mango and defrost corn add to above mixture.
combine lemon juice, olive oil seasonings. season with salt and pepper to taste.
once quinoa done remove from stove and place in bowl allow to cool then combine all veggie mixture and dressing
