1/2 cup chicken thigh meat cooked and cubed or shredded11 black olives sliced thin1 italian tomato sliced thin1/4 cup red pepper diced small1/4 cup onion diced small4-6 cloves garlic sliced thinextra virgin olive oil 1 1/2 tablespoons3 teaspoons basil dried more if you like1 tablespoon oregano dried1 teaspoon salt, optional1/2 cup fresh spinach stems removed and torn to small pieces.1 pizza dough recipe:"1/2 cup unbleached bread flour1/8 cup whole grain whole wheat flour1/8 cup whole grain rye flour1 tsp salt1 tsp yeast1/2 cup hot water
mix flours salt and yeast with a fork. Put your hot water in and stir making a thick gooey dough. turn out on floured work surface adding a little bread flour as needed to knead dough into a smooth round ball, may be a little bit sticky.
put dough into bowl and cover while you dice chicken and veggies.
Preheat oven to 375 degrees F.
roll dough out to about 1/8 " thickness on a floured work surface place on a cookie sheet unless you have a stone to cook the pizza on in your oven then place on bottom of cookie sheet that has been liberally sprinkled with corn meal
turn the edges of the dough, all the way around, towards the inside of the crust making a nice little raised edge. With a fork lightly pierce the crust all over the inside.
Drizzle 2 tsp EVOO over crust and spread with your fingers or a spoon. Add the dried or fresh basil, peppers, onions, garlic, tomatoes, and chicken. Sprinkle your cheese lightly over the top and slide the pizza onto your stone in the oven or place cookie sheet in and cook for aprox 15 minutes.
