Pumpkin Muffins

Ingredients
4 eggs1tsp vanilla1 1/3 cups skim milk4 tsp pumpkin pie spice2 tsp cinnamon1/2 cup sugar3/4 cup flour1 cup carrots4 tbls of raisinsa small can of crushed pineapple
Directions
Beat eggs and vanilla until frothy, add pumpkin, mix well. Add dry ingredients, carrots, raisins & pineapple. Spray 24 muffins cups with non stick spray, bake at 350 for 15 minutes or until done.
