Easy work day lunch

Ingredients
2 large carrots1 leek1 medium/large courgette5 stalks of celery1 large onion1.5 pints of waterseasoning
Directions
Chop the onion and leek and put them into a warm pan to sweat. Whilst the onion is sweating chop all other veg into 1cm (roughly!) pieces. Once the onion & leek is translucent add all other veg and 1.5 pints of boiling water. Season with any herbs you feel like, I sometimes just add salt and pepper but equally I'll sometimes add a veggie stock cube. Boil on a medium heat until the veg is tender, then blitz until smooth.
