White Chicken Enchiladas with spinach

Ingredients
1 Lb. Boneless/Skinless Chicken Breast, cooked and shredded2c. fresh spinach, chopped8 Xtreme Wellness Tortillas2 Tbsp. Butter2 Tbsp. Flour2c. Chicken Broth1c. Fage 0% Plain Yogurt1 - 7oz. can chopped green chilies1/4 tsp. Garlic Powder1/4 tsp. Chili Powder1/2 tsp. Onion Powder1.5 c. Mexican 2% Cheese, Shredded
Directions
Mix together shredded chicken, spinach, and 1 c. of the cheese. Divide evenly among the 10 tortillas roll and place seam side down in a 9X9 baking dish. Make a roux with the butter and flour. Add the chicken broth and cook until thickened. Take off heat and add the yogurt, chilies and seasonings. Pour sauce over enchiladas, top with remaining 1/2 c. cheese and bake at 350 degrees for 30 minutes.

Serving Size: Makes 8 enchiladas (1 enchilada per serving)
