Ingredients
2 Tbsp olive oil3 eggs1/3 cup spinachSprinkling of black olives, chopped bell peppers, and chopped onions1/2 cup tomatoes, reserving half for toppingNO CheeseSalt and pepper to taste
Directions
Saute vegetables in olive oil over medium high heat until soft. Add eggs. Cook until set, about 3 minutes. Serve topped with fresh tomatoes.
