Ingredients
1 cup pirurutong rice (dark purple rice)2 cups water1/3 cup brown sugar1 cup shredded coconut1 teaspoon coconut extract (although I bet almond extract would be delicious too!)
Directions
Prepare rice allowing for it to simmer for 30 minutes
Mix everything together
Press into rice press
Chill on a wax paper lined cookie sheet for at least 2 hours

Serving Size: Makes 6 large balls
