Introduction

I find this simple dessert quick and easy and a nice finish to a spicy dinner. And with just a little over a hundred calories it fits nicely in my plan. The unsweetened toasted coconut is not in the nutrition info. I did not want to skew the numbers with estimate of a sprinkle. Enjoy. Ingredients

    1/2 cup Pineapple Chunks paced in own juice
    (no sugar added)
    1TB Reserved pineapple juice
    1Tsp Packed light brown sugar
    1TB Fresh lime juice
    1/4 cup Non fat plain or vanilla yogurt
    * a sprinkle of toasted unsweetened coconut flakes (optional and not in nutritional values stated)

Directions

1. Heat a non stick skillet to medium.
2. Drain Juice from canned pineapple, reserving 1TB of juice.
3. Toss pineapple in skillet and stir for two minutes to warm.
4. Add pineapple juice,lime juice and brown sugar. Swirl pan 3 times as juice and sugar boil.
5. Pour into serving dish. Top with yogurt. Sprinkle with coconut if you like.

**This is equally good with plain or vanilla flavored yogurt.

    Incredible!
    This was great. I only used 1/2 tsp of lime juice instead of 1 tsp. Had this in the Ozarks and was trying to duplicate the recipe when I found yours - this is very close but they actually deep fry it - I didn't want to do that. This is wonderal! - 10/15/12

    This is a very good recipe! I tried it just how it was written and me and my husband really loved it! I am going to try this with mandarin oranges next time so that my daughter will eat it - will let you know how it comes out. - 3/12/09
