Healing Stroganoff- Beefy Adaptation

1lb beef pot roast3 cups beef broth1 lg white onion, peeled and chopped1 cup white button mushrooms, washed and chopped3 cloves garlic, peeled and chopped2tsp olive oilReduced fat sour cream, 1 cup (approx 2T per serving)Egg noodles as desired (2 cups included in recipe)
Place pot roast in crockpot and pour in beef broth to cover (approx 4 cups). Cook for at least 6 hours on low during the day.
Saute the onions, garlic and mushrooms in olive oil until soft and fragrant. Remove pot roast onto a cutting board and shred or cube as desired. Add vegetables, meat and gravy to a large pot and simmer until broth is reduced to desired consistency.
Add egg noodles and cook through (approx 5 min).
Serve with 2T sour cream on top (calories not included in nutritional info) and chopped chives if desired (not included in recipe).
