Turmeric and Lemon Chicken

Ingredients
4 Chicken breasts, boneless & skinless (or use any chicken)1/2 cup lemon juice (1-2 lemons juiced - depends on how much juice the lemon has)1 large onion, sliced in rings1 clove garlic, chopped1 teaspoon turmeric1 tablespoon saffron1/2 teaspoon pepper1/4 teaspoon salt1/2 cup chicken broth1 Bag of frozen broccoli / cauliflower or mixed
Directions
Combine lemon juice, onion, garlic, turmeric, saffron, water and bouillon in a large re-seal able plastic bag.

Add chicken, turning to coat with marinade.

Marinade in fridge for 1-8 hours or overnight, turning occasionally. (Lemon is very bitter. If you don't like alot of lemon flavor than marinate for 1-3 hours. If you like alot of lemon flavor marinate over night.)

Remove chicken from marinade.

Sprinkle lightly with salt and pepper.

In a 9 x 13 pour broccoli and cauliflower on bottom of pan. Place chicken on top of broccoli and pour marinade over top. Bake at 400 degress for 30 minutes or until chicken is done, turning once half way through.

Serve chicken with onions, broccoli and cauliflower.
