Banana Pecan Muffins

Ingredients
3/4 cup organic sugar1/2 cup butter (slightly softened)2 eggs (slightly at room temperature)1 tsp. baking soda3 Tb. plain greek yogurt3 mashed bananas2 tsp. vanilla extract1 1/2 cups sifted all purpose flour1/2 cup pecans (optional)
Directions
Preheat over to 350 degrees. Mix butter and sugar in kitchen aid mixer w/paddle attachment; cream with eggs and vanilla extract until well blended. Add mashed bananas to butter and egg mixture. Add in yogurt and sifted flour with baking soda; mix well. Bake muffins for 15-20 minutes (check with tooth pick) every 3 minutes after the 15 min. mark if not done yet.
