Cucumber + Salad

Ingredients
2 large Cucumber (peeled & sliced)2 medium Red Ripe Tomatoes, cut into bite size pieces1 medium Purple Onion, sliced1 medium Red Bell Peppers, sliced8 tbsp Kraft Zesty Fat Free Italian Dressing, 3 tbsp Cider Vinegar
Directions
This makes 10 1 cup servings.

Prepare all vegetables and top with dressing and vinegar. Let marinate for 30 minutes before serving. For variation you can add green beans, artichoke hearts, beans, chopped chicken tenders, asiago or cheese of your choice, etc. It's great served over 1 cup of cottage cheese or as a side to a lean piece of beef.
