Spinach Enchilada Bake - Low Carb

1 lb ground beef1 small onion1 can enchilada sauce5 tsp taco seasoning1 package cream cheese (8oz), softened1 package frozen spinach (10 oz), thawed2 eggs1.5 cups Mexican blend cheese
Preheat oven to 350
In a skillet, brown beef and onion together. Add taco seasoning and enchilada sauce. Simmer til thickened.
Meanwhile, in a large bowl mix eggs, cream cheese, and spinach together.
In a 9x9 casserole dish, spread half of the meat mixture across bottom of dish, edge to edge. Pour spinach mixture on top and spread edge to edge. Add 1 cup of Mexican cheese blend, spread evenly. Add rest of meat mixture and sprinkle with remaining cheese. Bake at 350 for 30 minutes.
