Spinach and Mushroom Quiche, crustless

1 T. butter1 small onion3 cloves garlic8 oz. mushrooms16 oz. fresh spinach, chopped4 oz. feta cheese (can used herbed)4 oz. cheddar cheese, grated4 eggs, beaten1 cup whole milksalt and pepper
Saute onion and garlic in butter. Remove and set aside. Then saute mushrooms, and add spinach and cook until wilted and tender. Whisk together eggs and milk in large bowl. Add spinach, cheeses, and onion and garlic mixture. Spoon into a glass pie plate sprayed with Pam. Bake for about 50 minutes at 375 degrees. Cool about 15 minutes before serving.
