1 can whole coconut milk (don't get the low fat)1/2 teaspoon vanilla extract2-3 teaspoons maple syrup (or to taste - I never measure!)
Refrigerate can of coconut overnight
Open and scoop out the hard part into a bowl - (save the liquid and use in other desert dishes when milk is called for)
Whip the cream - takes no time at all, add the maple syrup and vanilla to taste - and YUM! You have whipped cream!
