Sugar Free Macaroons

Ingredients
1 8-oz package shredded UNSWEETENED coconut (227g)13 tbsp liquid egg whites--equivalent of 4 egg whites1 tsp vanilla extract1 1/3 cup stevia cup-for-cup (such as Stevia In The Raw)1/4 tsp salt1/4 tsp almond extract
Directions
1. Preheat oven to 325F and line cookie sheets with parchment paper (or foil).
2. In a large bowl combine all ingredients and stir, stir, stir until incorporated.
3. Drop by rounded 1/2-tbsp fulls onto cookie sheets (makes apprx 40-42 cookies).
4. Bake for approximately 25 minutes or until brown and solid. Remove from sheet after it's cooled slightly. Cool completely on drying rack.
