*Lean Ground Sirloin 10% Fat, 16 oz Onions, raw, .75 cup, chopped Carrots, raw, .75 cup, chopped Celery, raw, 1 stalk, medium (7-1/2" - 8" long) Garlic, 1 clove *Del Monte Petite Cut Diced Tomatoes, 3.5 cup Beans, red kidney, 1.5 cup Beans, great northern, 1.75 cup Tomato Sauce, 1.75 cup Oregano, ground, 1 tsp Basil, .33 tbsp Pepper, black, .5 tsp Thyme, ground, .5 tsp *Qunioa 1/4 dry, 4 serving water 1 cup
Brown ground sirloin, add onion, carrot, celery and garlic. Saute for 10 min, or until veggies and tender.
Add all ingredients except qunioa and simmer for 1 hour, stirring often.
At 50 min - cook quinoa to package directions. Add to soup. Add 1 C. water or more to thin soup out, then simmer 5-10 more min, serve with freshly grated cheese if you like.
