Yellow Split Pea Veggie Soup

Ingredients
1 16 oz. bag yellow split peas, rinsed1 diced zucchini2 14.5 oz cans,no salt added diced tomatos with juice1 head escarole, chopped3 stalks celery, diced finely1 Italian pepper, diced finely1 to 2 jalipiano peppers, diced finely1 large carrot, shaved with a peeler2 to 3 32 oz low sodium chicken broth, (Pacific organic is the best.)2 to 3 cloves garlic, minced2 tablespoons basil2 tablesppons parsley
Directions
Add broth and split peas to soup pot and turner burner to high. Bring to boil while adding rest of ingredients. Let boil for about 15 minutes and turn to medium heat. Let simmer for about 20 to 30 minutes. Makes about 10 servings.
