Smoky Black Bean & Sweet Potatoe Chili

Ingredients
Non-stick cooking spray1 tbsp chopped canned chipolte pepper in adobo sauce1 tbsp unsweetened cocoa powder1 tbsp butter,melted2 tsp ground cumin2 tsp dried oregano1 tbsp chili powder1/2 tsp cinnamon4 cloves garlic, minced2 15 oz can of black beans3/4 pound sweet potatoes, peeled & cut into 1/2 inch pieces1.5 cup corn1 green bell pepper1 28 oz diced tomatoes1/4 cup shredded reduced fat cheddar cheese2 tbsp chopped cilantro
Directions
melt butter and mix in cocoa powder
Coat inside of slow cooker w/ cooking spray. Combine chipolte pepper, cocoa powder mix, cumin, oregano, chili powder, cinnamon, garlic, black beans, sweet potatoes, corn, bell peppers, & tomatoes in slow cooker, cook on low for 8 hours
Serve topped with cheddar & cilantro

    I made this tonight for dinner. It was very good! The vegetables were a little mushy, but that may have been my slow cooker. I will definitely make this again, but I may cook it for 6 hours instead of 8. - 2/24/17
