Tortellini & White bean soup

Ingredients
1 TBS olive oil3 large shallots, chopped1 large carrot, pealed and chopped2 cloves garlic, chopped1 can Cannellini beans, rinsed and drained4 C spinach or swiss chard6 C chicken broth1 pkg cheese tortellini
Directions
In large pot heat olive oil over medium heat. Add shallots, garlic, and carrot. Cook 5 minutes, stirring occasionally. Add beans, spinach and broth.

Bring soup to a boil over medium high heat. Add tortellini and reduce to simmer. Cover, cook for 5 minutes until tortellini are just tender. Season with salt & pepper to taste.
