Indian Spice Spaghetti Squash

1 small spaghetti squash, cooked & shredded1 tblsp. oil (olive or vegetable)1 tsp brown mustard seeds3 tblsp. butter1/2 cup chopped onion (i used green)2-3 cloves garlic, minced2 tsp minced fresh ginger1 tsp cumin seeds1/2 tsp ground coriander1/2 - 1 cup chopped tomato1 small serrano chile, seeded and minced (i used jalapeno)1/2 tsp salt1/2 cup coursely chopped cilantro (optional!)
-cut squash in half, clean out seeds, etc, place on plate with 1 tblsp water and cook for about 5 mins in the microwave. Shred with fork.
-heat oil in pan, add brown mustard seeds and heat til all are "popped" (about a minute), add butter, onion, minced garlic, minced ginger and cook a few mins., add tomato and cook another couple of mins then stir in the "spaghetti" and heat up.
Serving Size: makes about 3-4 servings
