Stuffed Baked Potato Salad

Ingredients
I baked (or cooked) whole medium sized potato, hot or cold1 tablespoon onion (chopped)1/4 cup creamed cottage cheese1/4 cup red cabbage, shredded1/4 cup cucumber, chopped1/2 teaspoon ground Sumac (optional)
Directions
Stab your washed potato with a fork a few times. Steam bake (covered) your whole unpeeled potato in the microwave for 3 minutes, or till it tests done with a fork. Allow to stand. covered, while you prepare the other ingredients and mix them together. You can also wait till your potato has cooled or cool it in the fridge if preferred.
Cut the potato open and stuff with filling.
Serve in a bowl.
