Asian Inspired Slaw

* Napa Cabbage (one medium head, shredded) * Red bell pepper, thinly sliced * 1 Cucumber (with peel), (julienned) * fresh cilantro, (1/2 cup, chopped) * Honey, 1 tsp. * Sesame Seeds, 1 tbsp (lightly toasted in dry pan) * 1 Scallion, (thinly sliced) * Extra Virgin Olive Oil, 1 tbsp (heated gently with sesame seeds and ginger) * Soy Sauce, 2 tbsp * Ginger Root, 2 tsp (finely chopped) * Rice Vinegar, 3 tbsp * Hot Chili Peppers, 1 tb. (optional)
Shred cabbage, thinly slice red bell pepper, scallions, and cucumber. Combine in large bowl. Add chopped cilantro.
In a small pan, lightly toast sesame seeds.
Add ginger, olive oil, soy sauce, and rest of ingredients, except the cabbage mixture.
Heat gently, then pour over cabbage and toss to thoroughly coat the vegetables.
