Loaded Baked Potato Soup

6 med baked potatoes6 slices turkey bacon-cooked till crisp1 12 oz. can evaporated fat free milk4 oz. shredded extra sharp cheddar cheese1 cup lite sour cream1 12 oz. pkg frozen cauliflower1/3 cup (approximately 6) scallions chopped4 tsp. Knorr chicken flavored bouillonsalt, lemon pepper and black pepper to taste
skin the baked potatoes and roughly mash them while the cauliflower is cooking in at least 2 cups of water (till soft). Add the dry bouillon to the cooked cauliflower, as well as the evaporated milk, sour cream and potatoes. Using an immersible blender, process till smooth and creamy. Stir in the shredded cheese, chopped scallions-green and white parts, crumbled bacon, and then season to taste with the lemon pepper, salt and black pepper. Add as much water as needed to obtain your desired consistency.
