Raw Vegan Ranch Dip (Soy-free and gluten-free)

1 C raw cashews, soaked for 2 hours in water2 dates, soaked in at least 1 C water1/4 C fresh lemon juice (about 1 lemon)1/4 C raw apple cider vinegar1 lg clove garlic (or 2 small)2 Tbsp onion (I like sweet onion or red onion.)0.5 Tbsp Herbamare (sea salt/herb blend)0.5 Tbsp all purpose seasoning (salt-free)0.5 bunch parsleyHandfull fresh dillHandfull fresh basil
Drain and rinse soaked cashews.
Add all ingredients except fresh herbs to cashews in blender. (The longer you soak the cashews, the creamier the final product.) Blend until well-combined and smooth. Add fresh herbs and pulse to combine as desired.
Transfer to container and store in fridge. This dip tastes better after at least an hour or two in the fridge to give the flavors time to blend.
