Garden Vegetable Barley soup

Ingredients
1 1/2 c. chopped fresh cauliflower1 1/2 c. diced zucchini squash - abt. 1 medium1 1/2 c. diced summer squash - abt. 1 medium1 c. carrots peeled and chopped or baby carrots1/2 medium green bell pepper diced1/2 medium red bell pepper diced1 can petite diced tomatoes1 can vegetable broth2 1/2 cups water1 1/2 tbs. kosher salt1 clove fresh garlic minced1 cup quick cooking barley
Directions
Put all ingredients except barley in a crock pot. Let cook about 3 hours on high or 4 hours on low. Stir occasionally.
Add Barley the last 1/2 hour of cooking.
