Ingredients
Directions
.5 cup milk.5 cup coconut oil1 tablespoon+ of vanillaup to 2 teaspoons of salt.5 cup non-dutch cocoa1 cup sugar
After I dump the ingredients in the pot, I set the stove to 2 out of 10, then wait until the house smells like chocolate. Yup, I leave the kitchen and go do something else until my nose knows.
It's a bubbling chocolatey mass by then, and just the right temperature.
Turn off the heat, mix/whisk until smooth. The sheen will be kinda dull but reflective. Pour in about 4 cups of quick oats.
Pack it in to a chocolate lump. Scoop out servings and let cool.
If I'm in the mood, I flatten the cookies and spread unsweetened natural peanut (or almond) butter on them after they're done. My wife prefers sweetened almond butter.
I usually cut them in half when I give them to kids.
We usually eat them with spoons. They lend themselves to being eaten that way.
They do not get hard like peanut butter infused, sugary no-bakes.
Everyone who tries them enjoys them. Except for people who don't like coconut...
Even though the smell is there, there is just a hint of coconut flavor.
To go over the top, you can roll them in shredded coconut or nuts, too.
Serving Size: Makes 18 portions, if you don't make them huge =)
