Quick and easy Cheese potato soup

Ingredients
3 tbs Minced onion1 c diced celery1/4 c Cornstarch1 c 2% milk (Skim may be substituted for lower fat content)2 jars (12 OZ) Cheese spread (cheese whip or equivelent, I use Great value brand from walmart)1 tsp black pepper8 c diced potato4 c diced extra lean ham
Directions
Makes approximately 20 1 cup servings

In a 4 1/2 qt sauce pan place potatoes, onion and celery. Cover with water and boil until potatoes are tender. keeping enough liquid to just cover the potatoes, pour off excess.

In a bowl or mixing cup whisk cornstarch into milk until smooth. add cornstarch mixture and pepper to potatoes and cook on low-med heat until thickened. reduce heat to low, add ham and Cheese stirring until all of the cheese is melted. serve warm.


serving suggestions: I make this with a loaf of herb batter bread and a light salad.
