Cauliflower Salad

Ingredients
Cauliflower - chopped and ground in food processor or blender until consistency of couscousCucumber - peeled, seeded, and choppedCelery - chopped1/2 onion - chopped - red onion is bestGrape tomatoes - halvedKalamata olives - pitted and halvedRed and Yellow peppers - seeded and choppedHandful of fresh basil - chopped or sliced1/2 cup crumbled feta cheese1/3 cup Olive Oil3 TBLSP Apple Cider Vinegarsalt, pepper and oregano to taste
Directions
Chop all vegetables as noted.
Combine in bowl with olive oil and vinegar and spices
Mix well
Enjoy!
