vanilla almond protein breakfast cookie

-3 tbsp liquid egg white-.25 c coconut milk-1 tbsp unsweetened apple sauce (.78 oz)-1 tsp vanilla-.5 tsp almond extract-.35 c (28g) oats-1 scoop vanilla protein powder-1 tbsp coconut flour-1/3 tsp baking powder-1/8 baking soda-2 packets stevia (1 sprinkled on top)
Preheat oven to 350.
Combine wet ingredients and then add dry ingredients. Spread on cookie sheet prepared with nonstick spray.
Sprinkle top of cookie with remaining stevia packet. Bake for about 15 mins. Let cool on sheet before removing with spatula.
Serving Size: makes one large cookie
