1 tbsp olive oilSalt, pepper, Italian spices to taste1 can diced tomatoes1 can red kidney beans, rinsed and drained1 can black beans, rinsed and drained1 c diced carrots1 c diced celery1 cooked and shredded chicken breastChicken bouillonWater1 c roughly chopped spinach1/2 onion, diced1 clove garlic
In soup pot, heat olive oil to medium temperature. Add onions and garlic, carrot, celery and cook until tender. Season with salt, pepper, and italian herbs. Add beans and tomato, chicken bouillon and water. Simmer 30 minutes. Add pulled chicken breast, adjust seasoning, and add spinach a few minutes before serving.
