1 lb. fresh pork roast - Cubed 1 can Ro-Tel Diced Tomatoes and Chile Peppers1/2 cup Roasted green Chile can be mild, Medium or Hot.6 Medium Potatoes diced 2 inch squares. with or without skin1/2 Tsp Garlic(You May reduce Garlic to up to 1/3 tsp)Salt to taste aprox 1 tsp1/3 cup Onions (optional)onion salt or powder can also be subtituted. Water
Combine all ingrediance in a crock pot
Fill Crock Pot to an inch from the top with water.
cook for 6 hours.

This recipe was great! I was a little afraid that my stew wouldn't look like what the picture show, and it did end up not looking like not the picture. So I added chicken boullion after it had finished slow cooking. Mixed it in, and it got that stewy yellow look, and tasted as good and better! - 6/18/11
