Scrambled Tofu

Ingredients
2 blocks extra firm tofu, drained, cut into 1" cubes2 tbsp EVOO2 packages baby bella mushrooms (thinly sliced)10 oz. shredded carrots1/2 red onion (chopped)1/2 cup nutritional yeastJuice of 1/2 lemon2 tsp cumin1 tsp turmeric2 tsp thyme2 tsp paprika1 tbsp garlic powder1 tsp salt
Directions
Heat oil in large skillet, and add onion. Simmer for 3 minutes, then add mushrooms. Simmer 5 more minutes until soft. Add spice blend and stir for about 15 seconds, then add 1/4 cup water to deglaze the pan. Add tofu and carrots, mixing to coat with spices. Cook for about 15 minutes. Take off heat and add lemon juice and nutritional yeast. Mix well to coat tofu and veggies.
