Paleo Flax Muffin

Ingredients
1t coconut oil (plus additional for greasing coffee mug)1 large egg8 drops of vanilla Stevia2 T flax seed meal2 T shredded coconut1 T cinnamon.5 t baking powderGenerous pinch of salt
Directions
Grease coffee mug lightly with coconut oil.
Place 1 t coconut oil in bottom of mug, and microwiave 10 seconds to melt. Add egg and Stevia, mix thoroughly with a fork.

In a separate bowl, mix remaining ingredients. Pour dry ingredients into mug, mixing thoroughly with a fork. Microwave for one minute -- muffin should be pulling away from the sides of the cup. If not, microwave 10 -15 additional seconds.

Turn out onto plate, split, and enjoy!
