Cherry's Mashed Potatoes w/Chive & Onion Cream Cheese

Ingredients
Potato, raw, 6 medium, Approx 28 ozBrummel & Brown, Original Spread made with Yogurt, 2 Tbsp. May sub another spread, calories will vary slightlyCream Cheese - Kraft, Philadelphia, Reg, Chive & Onion, 4 tbspMilk, Anderson Erickson, 2%, 0.5 cup. May sub any brand of 2% milk
Directions
Wash and peel 6 medium potatoes (28 ounces). Cut into bite-size pieces, place in pot and cover with water plus 1". Bring to rapid boil, reduce heat to low and cover the pot. Cook 20 minutes or until potatoes are soft. Drain water and add 2% milk, spread and cream cheese. Beat until smooth. Salt & pepper to taste (will change sodium values)
